Focused on celebrating Australian produce, he crafts exceptional dining experiences that honour seasonal and indigenous ingredients.

    With over 24 years of experience, Callum has honed his craft across the globe, from his native Gold Coast to London and Fiji. Since joining Park Hyatt Auckland in 2019, Callum now oversees pastry operations for both Park Hyatt Auckland and Park Hyatt Sydney.
